About Coq au Vin
Coq au Vin is a classic French dish of chicken braised slowly in red wine with lardons (bacon), mushrooms, small onions and garlic. The name means "rooster in wine".
Traditionally an old rooster was used, as long cooking in wine made the tough meat tender. The chicken is often flambéed with brandy before the wine is added, and the sauce becomes rich and dark.
Burgundy is most closely associated with coq au vin, but many French regions make their own version with local wines. It is served with potatoes, pasta or crusty bread.
