About Chicken Kiev
Chicken Kiev, or Chicken Kyiv, is a chicken breast pounded flat, rolled around a piece of cold herb and garlic butter, coated in breadcrumbs and fried or baked until golden.
When you cut into it, the melted butter flows out, so care must be taken to seal it well. The dish is associated with Kyiv, the capital of Ukraine, and was popular in restaurants across the Russian Empire and the Soviet Union.
Its origins are disputed, and similar dishes existed in French cooking. In 1979 it became the first ready-made meal sold by the British store Marks & Spencer, and it is usually served with potatoes and vegetables.
