Carbonnade Flamande
Belgium
Also known as Stoofvlees, Flemish Beef Stew
About Carbonnade Flamande
Carbonnade Flamande is a Flemish beef stew made with Belgian beer instead of wine. Chunks of beef and plenty of onions are browned and then slowly simmered in dark or brown ale until the meat is falling apart and the sauce is thick and glossy.
A slice of bread spread with mustard is traditionally laid on top of the stew as it cooks. It slowly dissolves, thickening the sauce and adding a gentle tang. A little brown sugar or vinegar balances the bitterness of the beer, and thyme and bay leaves add aroma.
In Belgium the dish is known in Dutch as stoofvlees and is a classic of brasseries and home kitchens. It is almost always served with Belgian fries and mayonnaise, though mashed potatoes are also common.
