About Moules-Frites
Moules-Frites, mussels and fries, is often called Belgium's national dish. A large pot of mussels is steamed in white wine with butter, shallots, celery and parsley, and served with crispy Belgian fries.
The mussels open as they steam and release their juices into the broth, which is delicious with bread or fries. Other popular versions are cooked in beer, cream or garlic.
Belgian fries are fried twice for extra crispness and are served with mayonnaise. Moules-frites is especially popular in Belgium and northern France, where mussel season runs from summer to winter.
