About Kransekake

Kransekake is a tall Norwegian and Danish celebration cake made from a tower of rings of almond pastry stacked on top of each other, decorated with zigzags of white icing.

The dough is made only from ground almonds, powdered sugar and egg whites. It is baked in special ring molds, and a traditional tower has 18 or more rings, getting smaller towards the top. The cake is crisp outside and chewy inside.

Kransekake is served at weddings, Christmas, New Year and Norway's National Day on 17 May. It is often decorated with small flags, and at weddings the bride and groom lift the top ring; the number of rings that stick to it is said to predict how many children they will have.
