About Belgian Waffles

Belgian Waffles are thick, deep-pocketed waffles cooked in a heavy iron. Belgium has two main styles: the light, crisp, rectangular Brussels waffle, and the dense, chewy, irregularly shaped Liège waffle.

The Liège waffle is made from a rich, brioche-like yeast dough studded with pearl sugar. In the hot iron, the sugar caramelizes into crunchy, golden spots, which is why it is eaten plain, often warm from a street stand.

The name "Belgian waffle" became known worldwide after the 1964 World's Fair in New York, where they were served with strawberries and whipped cream. In Belgium they are a popular snack, eaten plain or topped with icing sugar, cream, fruit or chocolate.
