Biltong
South Africa
About Biltong
Biltong is a South African dried, cured meat, usually beef, although game such as kudu or springbok is also used. Strips of meat are marinated in vinegar and spices, then air-dried for several days.
The meat is seasoned with salt, black pepper, sugar and toasted coriander seeds before drying. Unlike jerky, biltong is not cooked or smoked, and it can be sliced thin or eaten in thick, chewy pieces.
Biltong comes from methods used by early Dutch settlers to preserve meat on long journeys, possibly adopted from the indigenous peoples of southern Africa. Today it is a beloved snack across South Africa, Namibia and Zimbabwe, eaten at rugby matches and on road trips.
