About Bandeja Paisa

Bandeja Paisa is a huge platter from the Antioquia region of Colombia and one of the country's most famous dishes. "Bandeja" means tray, and "paisa" refers to people from the region around Medellín.

A single plate includes red beans cooked with pork, white rice, ground beef, crispy fried pork belly (chicharrón), chorizo, a fried egg, fried sweet plantain, an arepa and slices of avocado. It is often served with hogao, a tomato and onion sauce.

The dish was meant to give farmers and laborers enough energy for a long day of work in the mountains. It is very filling and is usually eaten at lunchtime, with many people sharing one plate.
