About Ajiaco

Ajiaco is a hearty chicken and potato soup from Bogotá, the Colombian capital. It is made with three kinds of potatoes, including tiny yellow papa criolla, which melts into the broth and makes it thick and creamy.

Its signature flavor comes from guascas, an Andean herb with a slightly grassy, artichoke-like taste. Pieces of corn on the cob are cooked in the soup, and the chicken is shredded before serving.

Ajiaco is served with capers, heavy cream and avocado on the side, so each person can add them to taste, along with white rice. It is a comforting lunch in Bogotá's cool mountain climate, and similar soups with the same name are made in Cuba and Peru.
