About Lamingtons
Lamingtons are Australian squares of sponge cake dipped in chocolate icing and rolled in desiccated coconut. Some versions are cut in half and filled with jam or cream.
They are named after Lord Lamington, governor of Queensland from 1896 to 1901. One story says a cook made them from leftover sponge when unexpected guests arrived.
Lamingtons are often sold at school fundraisers called "lamington drives". Australia celebrates National Lamington Day on 21 July.
