About Chicken Handi
Chicken Handi is a creamy North Indian curry named after the handi, a deep, wide-bellied clay or metal pot in which it is traditionally cooked. Slow cooking in the covered pot keeps the chicken tender and helps the spices blend.
The chicken is cooked with onions, ginger, garlic and tomatoes, then enriched with yogurt and a little cream. Spices such as cumin, coriander, chili and garam masala give it a warm, aromatic flavor that is rich but not too spicy.
It is popular in Punjabi and Mughlai-style restaurants in India and Pakistan, often served in the pot it was cooked in. Chicken Handi is eaten with naan, roti or rice, and finished with fresh coriander leaves.
