Also known as Medu Vada, Uzhunnu Vada

About Vada

Vada is a savory fried snack from South India, and the most famous kind, medu vada, is shaped like a doughnut. It is made from a thick batter of ground urad dal (black gram lentils), seasoned with green chilies, ginger, curry leaves and black pepper.

The batter is whipped until light and fluffy, then shaped by hand and deep-fried until crisp outside and soft inside.

Vada is a classic South Indian breakfast with idli, served with coconut chutney and sambar, a spiced lentil and vegetable stew. Many other kinds of vada are eaten across India, from lentil-based snacks to Mumbai's potato vada pav.
