About Smørrebrød

Smørrebrød are Danish open-faced sandwiches built on thin slices of dark, dense rye bread (rugbrød) spread with butter and topped with carefully arranged toppings. The name means "butter and bread".

Classic toppings include pickled herring with onions and capers, roast beef with remoulade and crispy onions, liver pâté with bacon and mushrooms, and egg with shrimp. Each sandwich is garnished with herbs like dill or cress.

Smørrebrød are eaten with a knife and fork, usually for lunch, often in a set order starting with fish, then meat, then cheese. Copenhagen has restaurants that specialize in them, sometimes with dozens of varieties.
