About Nihari
Nihari is a rich, slow-cooked stew of beef or mutton shank with bone marrow, cooked overnight in a spicy, thick gravy. It is a national dish of Pakistan.
The name comes from the Arabic word nahar, meaning morning, because it was eaten after the dawn prayer. It was created in the royal kitchens of Old Delhi in the 18th century.
The gravy is thickened with wheat flour and seasoned with ginger, fennel and other spices. It is served with naan, topped with ginger, green chilies, coriander and lemon.
