About Goulash Soup
Goulash Soup, or gulyásleves, is a hearty Hungarian soup of beef, potatoes, carrots and onions, flavored and colored with lots of sweet Hungarian paprika.
The name comes from gulyás, the Hungarian word for cattle herders, who cooked it in a kettle over an open fire on the Great Hungarian Plain. Caraway seeds, garlic and peppers are often added.
In Hungary, goulash is a soup, while the thicker stew known elsewhere as goulash is closer to Hungarian pörkölt. It is served with bread and sometimes small pinched dumplings called csipetke.
