About Mansaf
Mansaf is Jordan's national dish: lamb cooked in a sauce of fermented dried yogurt called jameed, served on a large platter of rice over thin shrak bread.
Jameed is made from goat's or sheep's milk yogurt that is strained, salted and dried into hard balls. It is dissolved to make a tangy, savory sauce. The dish is topped with fried almonds and pine nuts.
Mansaf is served at weddings, holidays and gatherings. Traditionally, it is eaten standing around the platter, using the right hand to form balls of rice and meat.
