About Machboos
Machboos is a fragrant spiced rice dish from Kuwait and the Gulf, cooked with chicken, lamb or fish. It is often called Kuwait's national dish.
The meat is cooked with onions, tomatoes and a spice blend called baharat, including cardamom, cinnamon, cloves, black pepper and turmeric. Dried black limes (loomi) give it a sour, smoky flavor, and the rice is then cooked in the rich broth with saffron.
Machboos is served on large platters with the meat on top of the rice, often with a spicy tomato sauce called daqqus. It is closely related to kabsa, eaten in Saudi Arabia and across the Arabian Peninsula, and is common at family lunches and celebrations.
