About Koshari
Koshari is Egypt's national dish and its favorite street food: a filling mix of rice, brown lentils and macaroni, topped with chickpeas, a spicy tomato sauce and crispy fried onions.
Each part is cooked separately and layered in a bowl. It is finished with daqqa, a garlic and vinegar sauce, and shatta, a hot chili sauce, so diners can adjust the sharpness and heat.
Koshari became popular in the 19th century and is thought to have been influenced by the Indian dish khichdi and by Italian pasta. Koshari shops in Cairo serve huge bowls quickly and cheaply, and the dish is naturally vegan.
