Khao Pad
Thailand
Also known as Khao Phat, Thai Fried Rice
About Khao Pad
Khao Pad is Thai fried rice, a quick and simple dish made by stir-frying cooked jasmine rice in a hot wok with garlic, onion and egg. "Khao" means rice and "pad" means stir-fried.
Day-old rice works best because it is drier and the grains stay separate. Common versions include chicken, pork, shrimp or crab, and it is seasoned with fish sauce, soy sauce and a little sugar.
It is served with cucumber slices, a lime wedge, spring onion and prik nam pla, fish sauce with chopped chilies, so diners can season it to taste. Khao Pad is a popular street food and quick lunch across Thailand.
