About Kebab

Kebab is a family of grilled meat dishes from Turkey and the Middle East. The most familiar forms are chunks of marinated meat grilled on skewers (şiş kebap) and minced meat shaped onto wide skewers and grilled over charcoal, such as Adana kebap.

Lamb and beef are traditional, seasoned with onion, garlic, paprika, cumin and red pepper flakes. Grilling over hot charcoal gives the meat a smoky, charred flavor.

Turkey has dozens of regional kebabs, from spicy Adana and milder Urfa kebab to İskender kebap, sliced döner meat with tomato sauce, browned butter and yogurt. Kebabs are served with grilled peppers and tomatoes, flatbread, bulgur or rice, and sumac-onion salad.
