About Fufu
Fufu is a soft, stretchy dough made from boiled starchy foods pounded into a smooth ball. In Ghana it is most often made from cassava and unripe plantain, and it is one of the country's most important staple foods.
Traditionally, two people make it together: one pounds the boiled cassava and plantain with a large wooden pestle in a mortar, while the other turns and wets the dough by hand between strikes. Today many people make it with ready-made fufu flour.
Fufu is eaten with soups such as light soup, groundnut (peanut) soup or palm nut soup. A small piece is pinched off with the fingers of the right hand, dipped in the soup and swallowed rather than chewed. Similar dishes are eaten across West and Central Africa.
