About Blini
Blini are thin Russian pancakes, made from a batter of flour, milk and eggs and often leavened with yeast. They are cooked in a hot, buttered pan and served rolled, folded or stacked with sweet or savory toppings.
Blini have been part of Slavic cooking for centuries and are closely tied to Maslenitsa, the week-long festival that marks the end of winter. Their round, golden shape is often said to represent the sun, and families eat them in huge piles throughout the festivities.
Classic toppings include melted butter, sour cream, honey, jam, smoked salmon and, for special occasions, red or black caviar. In Russia, blini are eaten both as an everyday dish and at celebrations.
