About Patatas Bravas
Patatas Bravas are chunks of potato fried until crisp and golden, served with a spicy sauce. They are one of the most popular tapas in Spain.
"Bravas" means fierce, referring to the sauce. In Madrid, salsa brava is a spicy paprika sauce made with olive oil, flour, stock and hot pimentón, while elsewhere it is often a spicy tomato sauce. Many bars also add a garlic mayonnaise (alioli).
Patatas bravas are thought to have been created in Madrid in the mid-20th century. Every tapas bar has its own recipe, and some are famous for their sauce.
