About Kumara Chips
Kumara Chips are New Zealand-style sweet potato fries. Kumara is the Māori name for the sweet potato, which has been grown in New Zealand for centuries. The chips are cut into wedges or sticks and fried or baked until crisp outside and soft inside.
The Māori brought kumara with them from Polynesia, and it became an important crop. The red-skinned owairaka variety is the most popular in New Zealand today.
Kumara chips are a favorite side at cafés and fish and chip shops, often seasoned with salt or spices and served with aioli or sour cream and sweet chili sauce.
