About Irish Stew

Irish Stew is a simple, hearty stew of lamb or mutton, potatoes and onions slowly simmered in water or stock, often with carrots and parsley.

It was originally made with mutton, the meat of older sheep, which became tender with long cooking. The potatoes break down slightly and thicken the broth.

There are many arguments over the "right" ingredients. Irish stew is considered the national dish of Ireland and is often served on St. Patrick's Day with soda bread.
