About Chicken Alfredo

Chicken Alfredo is pasta, usually fettuccine, tossed in a rich sauce of butter and Parmesan cheese and topped with sliced chicken breast. The sauce coats every ribbon of pasta and is seasoned with black pepper and sometimes garlic.

The dish traces back to Rome, where restaurateur Alfredo di Lelio served fettuccine with butter and Parmesan in the early 20th century. Hollywood stars Mary Pickford and Douglas Fairbanks ate it on their honeymoon in 1920 and helped make it famous in the United States.

In America, the recipe gradually changed: cream was added to make the sauce thicker and grilled chicken became a popular topping. Chicken Alfredo is now a staple of Italian-American restaurants, though in Italy it is better known as simple pasta with butter and cheese.
