About Kuku Sabzi
Kuku Sabzi is a Persian herb frittata, a thick, bright green egg dish packed with fresh herbs such as parsley, coriander, dill and chives, held together with only a few eggs.
The herbs are finely chopped and mixed with eggs, turmeric and sometimes walnuts and barberries, which add crunch and sweet-sour bursts. It is fried slowly in a covered pan or baked until set.
Kuku Sabzi is traditionally eaten at Nowruz, the Persian New Year, when green herbs symbolize rebirth and spring. It is served warm or cold, cut into wedges, with flatbread, yogurt and pickles.
