About Hot Pot
Hot Pot is a Chinese way of eating in which a pot of simmering broth is placed in the middle of the table and diners cook their own ingredients in it, such as thinly sliced meat, seafood, tofu, vegetables and noodles.
The Sichuan hot pot from Chongqing is famous for its fiery red broth full of chilies and numbing Sichuan peppercorns. Many restaurants serve a divided pot with a spicy broth on one side and a mild one on the other.
Each person mixes their own dipping sauce from sesame paste, garlic, sesame oil, soy sauce and herbs. Hot pot is a social meal, especially popular in winter and for celebrations.
