Causa, a dish from Peru

Causa

Peru

Also known as Causa Limeña

About Causa

Causa is a cold Peruvian dish of layered mashed yellow potatoes seasoned with lime juice, oil and ají amarillo chili, filled with tuna or chicken salad, avocado and mayonnaise.

The potato layers are bright yellow from the chili and potatoes. Causa is often shaped into a round tower or sliced like a terrine, and decorated with hard-boiled eggs, olives and parsley.

One popular story says that the name comes from the War of Independence, when women sold the dish to raise money "for the cause". It is served as a starter or light meal across Peru, especially in Lima.
